1-2-3 Gluten Free Biscuits
So Yesterday I woke up and attempted to cook biscuits and gravy. After being gluten-free for more than 10 days, I am really missing bread. I’ve tried several types to replace my soft white bread, or my favorite honey wheat bread. All the breads made from rice flour seem to get rock hard. They mostly seem to soften when warmed up slightly, but it just isn’t the same.
On pay-day Fridays one of my guilty pleasures is to pull through the drive thru of McDonalds and pick up a bacon egg and cheese biscuit. Obviously, that is something I won’t be able to do anymore. So I thought I would try the 1-2-3 Gluten Free Biscuit mix and see if I could make my own.
I don’t really know how to cook, so a mix is probably the way for me to go as I am teaching myself this new skill. The box directions call for a food processor, although you can mix it by hand. I still don’t have much strength, and while I could probably benefit from the exercise of mixing my own dough, where is the convenience in that? So the family took a trip to the local department store on Saturday in search of a food processor. I didn’t quite know what we were looking for and my husband enjoyed picking on me because I didn’t even know what one looked like.
By the time I figured out how to use the food processor, with the help of my loving hubby, I ended up spending about 2 hours cooking breakfast. Really it ended up being lunch time before I was finished. I managed to make a decent sausage gravy. The warm biscuits and gravy filled my stomach. It was worth the effort. I made sausage patties, then used the biscuits to make breakfast sandwiches and froze them. I reheated one this morning in my new toaster oven and it was actually really good. I was impressed with this mix and will try it again. It should be noted that I made my biscuits following the buttermilk directions on the box.
