When spending Memorial Day Weekend up in Michigan, I sat and tried to ignore family eating fresh fried asparagus, but became determined to fry up my own batch when I returned home. So tonight I looked up a recipe for gluten-free tempura and it wasn’t half bad. The recipe I used comes from the blog Vegetable Japan.

Besides asparagus, I battered and fried yellow squash, but really you can do this with any vegetables you choose. I will make this again in the future when I have the craving again.

Gluten Free Cookie Brownie Bars

Tonight my son and I whipped up the Cookie-Brownie Bars using the Betty Crocker Brownie and Chocolate Chip Cookie mixes. The recipe for this tasty treat is available on the new website Corbin thought these were delicious. The only problem was that the recipe calls for waiting an hour before you cut into them. Uhm we managed to wait about 20 minutes! I found it was easier to mix the cookie dough with my hands rather than using a spoon. This is a yummy, very easy cheater recipe that would be hard to mess up….even for a non-cook like me!

Yummy Gluten Free Churros

I use to love going to the local Mexican bakery, Mama Ines, and buying all kinds of pastries. After going gluten-free I never thought that I would be able to eat another churro again, but Tasty Eats At Home has adapted a Gluten Free Girl recipe for this yummy Mexican pastry.

Surprisingly it seems simple enough for even me to try. I think maybe I will look for the ingredients tomorrow at Trader Joe’s and give it a shot. I’ll let you know if even I am able to create this yummy treat. If I can do it, anyone can. I just need to figure out what a pastry bag is now.
